Comfort and richness mark our new Winter 2022 Menu!
Elements of slow cooking, roasting and grilling using wood and charcoal for smokiness and flavour blend harmoniously in Sandalford Restaurant & Bar’s new Winter 2022 A La Carte menu.
Executive chef Alan Spagnolo has invoked the comfort and richness of the coming season in selections full of flavoursome WA produce which really shines during our cooler months.
Alan believes using WA produce on Sandalford menus is important because it supports local businesses, and seasonal produce is as fresh as it gets due to shorter transportation times.
The new menu leads with Alan’s impressive signature dish, Futari Wagyu beef Rotolo with soft yolk, bone broth, crushed pea lemon verde and parmigiano Reggiano, and continues with a medley of deliciousness.
"The Exmouth wood-fired tiger prawns need little enhancement so they are simply done with Aleppo pepper, sea asparagus and citrus butter. I think they’re re addictive!”
“For a seasonal comfort dish however, the braised duck, porcini, shitake and shimeji mushroom ragout served with hand-cut egg yolk dough pappardelle and pecorino is my absolute favourite.”
There are also winter oysters, WA snapper brandade (a marriage of puréed snapper, olive oil, bread, garlic and milk) Kerrigan Valley beef carpaccio and a superb vegetarian option of charged eggplant, pomegranate and almond salad.
“The charcoal roasted eggplant has a beautiful smokiness and is bursting with flavours of herbs, pomegranate and almonds, while the fig vincotto is made from Sandalford’s own estate produce.”
Sandalford’s new season A La Carte Menu – launching June 9 - also features vegetarian, vegan and gluten free dishes created from locally sourced, seasonal Winter produce.
