Pedro Ximenez & Muscadelle (Tokay)
Winemaking
Pedro and Muscadelle grapes are hand-picked when raisined and jammy.
The fruit is crushed then left soaking on skins for 24 hours. The must
is then drained and pressed with the resultant juice being inoculated by
selected yeast strains. After the fermentation starts, the wine is
fortified with premium grape spirit. Ageing for up to 25 years then
takes place in old Sherry casks. Blending with minimal filtration takes
place prior to bottling.
Tasting Notes
Sandalera is a dessert fortified wine. Tawny coloured, it has a
complex nose rich in malty toffee aromas of great intensity. It tastes
sweet, luscious and concentrated yet not heavy; rather like a mouthful
of dates, toffee and roasted nuts.
Assessment
This luscious, rich dessert wine is based on Pedro Ximenez vines that
were part of an original planting on the Caversham vineyard. It is a
blend of vintages with some of the oldest material dating back more
than 20 years and has an average age of 15 years.
“…it is fortified like your average Muscat
or tokay and the result is an extraordinarily intense wine with malty,
nutty toffee flavours and incredible length. This wins a trophy or gold
medal every time it enters a show in Western Australia and is unquestionably
that state’s greatest fortified wine.”
Stuart Gregor’s Wine Guide 2003
“A powerful fortified with prune, chocolate and honey flavours.
The sweetness is balanced by fine brandy spirit.” The Wine Magazine
