Tarago River Triple Cream
Made on the farm by Laurie Jensen in the lush district of Gippsland, Victoria. Whilst related to Brie, this Triple Cream is not strictly Brie in style or origin. The difference is the addition of extra creams and the special fermenting cultures that produce a white bloom. Lush and buttery, this cheese exhibits a richness of flavour on the palette. |

Healeys Pyengana Aged Cheddar
Australia’s oldest specialist cheese made in North Eastern Tasmania. Dating back to the turn of the century, it is still hand made using the traditional stirred-curd technique. Matured 14months this cheddar is fine textured with a subtle flavour of herbs and honey. |

Woodside Vigneron Goats
Pleasantly earthy Goats milk cheese from the Coriole Vineyard in McLaren Vale, South Australia. When young it is gently washed in a 2004 Wooded Chardonnay then wrapped in selected vine leaves. When ripe this cheese will ooze a velvety paste full of complexity resulting in an exceptionally pleasing mouth fill. |

Tarago River Shadows of Blue
Made on the farm in Central Gippsland, Victoria, this is a traditional farmhouse blue made from cows milk. A mild, double cream blue made with the Roquefort mould, the texture is creamy and smooth, the flavour buttery and rich. |
