Cheeses

Queso Tradicionales Valdeon
A Spanish mixed-milk blue cheese made from 90 per cent cows milk and 10 per cent goats milk which encourages the cheese’s unique flavour characteristics. Additionally, 3 to 4 months ripening in the natural limestone caves that line the surrounding mountains provides a natural airborne blue mould that is transmitted to the cheese s when they are pierced. When almost mature, the cheeses are wrapped in sycamore leaves for transport down the mountains. Quite strong and aromatic, rich and crumbly, Valdeon lingers long on the palette.

Maffra Long Hold Clothbound Cheddar
This smooth, compact cheddar is from the lush region of eastern Gippsland, Victoria. Being aged for 12 months and wrapped in traditional cloth and then waxed, allows this cheddar to fully develop thus exhibiting slight acid on the front palate through to a mature full smooth flavour.
Soignon Saint Maure
This smooth, compact, textured goat’s milk cheese is traditionally from the Centre, Poitou and Charente’s regions of France. Covered with salted ash then laid on boards to drain this cheese is then matured for 10 to 12 days. The paste is firm and exhibits a lovely sheen across the surface when ready to eat.
Guilloteau Buche d’Affinois
A Cows milk cheese made near Lyon, France. After washing the cheese over several days, affinage takes place in humid cellars. The cheese is encouraged to develop a mixed rind of white and B linens resulting in a silky smooth texture, slightly pungent aroma and a very mild and creamy flavour.
